Double Choc Fudge Brownie Recipe

This receipe is a favourite in my family. It is quick, easy and slice of warm gooy brownie is so statisfying. Once you have made this receipe once, you will be able to throw it together in 10 minutes and it only takes 20 mintues to bake.

Ingredients

Quantity Ingredient Preparation & Notes
For brownie batter
150g dark cooking chocolate broken into chucks
90g unsalted cooking butter roughly chopped
2 whole eggs pre-cracking into a bowl, remove any shell
150g caster sugar
6g vanilla paste
125g plain flour sifted
200g white chocolate chips
To Serve
60g pure icing sugar sift over brownie once cooled
1 punnet strawberries hualed and halfed, optional

Method

  1. Preheat the oven to 180°C and line the baking tin with baking paper.
  2. Weigh out the butter and dark chocolate in a microwave safe container. Microwavefor 1 minute then stir until smooth and glossy. The mixture might need an extra 30second in the microwave after stiring depending on the microwave.
  3. Add the egg and caster sugar into a mixing bowl and use an eltric mixer to whisk on medium-high until the mixture is light and airy. Then add the vanilla paste and whisk on high for another 30 seconds.
  4. Slowly pour the chocolate mix into the egg mix whilst the beater is running on low-medium. This step is important, the slow pour and active whisk allow the warm chocolate mix not be incorperated into the egg mixture without scrambelling the eggs.
  5. Use a spatula to scrap the side of the chocolate mixture to ensure it is all added. Stop mixing and add the flour and white chocolate. Use the spatual to fold the flour and chips into the batter until the flour is just incorperated.
  6. Pour the batter into the prepared tin, I use a 20x20cm tin. Bake in the middle rack for 20minutes. Let the brownie cool in the tin for 10 minutes.
  7. Cover the brownie with icing sugar and cut into small squares or rectangles.
